You can change it entry by entry. Or you can put it as friends only from this point on.

Won't change past entries but Default Entry Security sets what it'll be like in the future even if you forget to tick the box. If you want to post publicly after selecting friends in those settings you'll have to post and then edit the entry to make it public.
